Pop Rocks Potion

Ingredients
  

Rimming Station
  • 2 tbsp light corn syrup for making the rim sticky
  • 1 packet popping candy Pop Rocks, strawberry or cherry flavor
  • 2 tbsp chunky crystal sugar or crushed rock candy
The Potion
  • 1.5 tbsp grenadine or raspberry syrup
  • 6 oz lemon-lime soda Sprite or 7UP, chilled
  • 1 cup ice cubes fresh and clear
Garnishes
  • 1 tbsp colorful round candies Skittles or M&Ms
  • 3-4 whole fresh raspberries

Equipment

  • Short rocks glass
  • Small shallow plates
  • Colorful paper straws

Method
 

  1. Mix the popping candy and chunky crystal sugar together on a small shallow plate.
  2. Pour the light corn syrup onto another small plate. Dip the rim of your glass into the syrup, then immediately press it firmly into the candy mixture to coat.
  3. Carefully fill the candy-rimmed glass to the top with fresh ice cubes, dropping the raspberries in among the ice.
  4. Pour the grenadine directly over the ice so it settles at the bottom of the glass.
  5. Slowly pour the chilled lemon-lime soda over the ice to fill the glass, watching the pink gradient form.
  6. Quickly drop the colorful round candies onto the top of the ice, sprinkle a pinch of extra popping candy on top to activate the fizz, add a straw, and serve immediately.

Notes

Do not assemble these in advance. The soda and ice will melt the candy rim and prematurely pop the candy. Build them fresh right as you hand them out!
