Ingredients
  

Pineapple Slush Base
  • 2 cups frozen pineapple chunks
  • 1.5 cups pineapple juice chilled
  • 1 tbsp fresh lime juice
  • 3 tbsp light simple syrup cooled (made from equal parts water and sugar)
  • 1 cup ice cubes optional, to thicken
Cherry Swirl & Garnish
  • 4 tbsp maraschino cherry juice or grenadine for dramatic swirl
  • 2 maraschino cherries with stems
  • 2 wedges fresh pineapple for rim decoration

Equipment

  • High-speed blender
  • Measuring cups and spoons
  • Small saucepan (for simple syrup)
  • Two clear takeaway-style cups (for the authentic look)

Method
 

  1. If simple syrup isn't ready, dissolve 3 tbsp sugar in 3 tbsp water over heat, then cool completely.
  2. In a blender, combine frozen pineapple, chilled pineapple juice, lime juice, and cooled simple syrup.
  3. Blend on low to break up fruit, then gradually increase to high. Blend until completely smooth and thick.
  4. Check texture; if too thin, add 1 cup ice and re-blend on high.
  5. Prepare cups: hold them at an angle and drizzle maraschino juice onto the dry inner walls in several spots to create defined streaks.
  6. Slowly pour the thick pineapple slush into the center of the prepped cups to preserve the cherry swirl aesthetic.
  7. Top each drink with a maraschino cherry (stem up), a fresh pineapple wedge on the rim, and a straw. Serve immediately.

Notes

Using frozen fruit is key to achieving the smooth, micro-crystalline texture. Pre-chilling the juice helps immensely.
