Classic Piña Colada

A frosty, creamy, and refreshing tropical blended cocktail made with light rum, rich cream of coconut, fresh pineapple juice, and frozen fruit.

Ingredients
  

Cocktail Ingredients
  • 2 oz light rum white or silver rum
  • 2 oz cream of coconut such as Coco Lopez, stirred well
  • 3 oz pineapple juice 100% juice, chilled
  • 0.5 cup frozen pineapple chunks
  • 1 cup ice plus more as needed for thickness
Garnish
  • 1 slice fresh pineapple wedge
  • 1 tropical flower or cherry optional

Equipment

  • Blender
  • Hurricane or Highball glass
  • Measuring jigger

Method
 

  1. Place your serving glass in the freezer for 10-15 minutes to frost.
  2. In a blender, add the light rum, cream of coconut, and pineapple juice.
  3. Add the frozen pineapple chunks and ice to the blender.
  4. Blend on high speed for 20-30 seconds until the mixture is completely smooth and creamy. If it is too thin, add a little more ice; if too thick, add a splash of pineapple juice.
  5. Pour the blended mixture into your chilled glass.
  6. Garnish the rim of the glass with a fresh pineapple wedge and a tropical flower or maraschino cherry. Serve immediately with a straw.

Notes

Ensure you are using 'Cream of Coconut' (which is sweetened and thick) and not 'Coconut Milk' or unsweetened 'Coconut Cream'.
