White Christmas Punch

Ingredients
  

Punch Base
  • 1 bottle (64 oz) white cranberry juice chilled
  • 1 bottle (64 oz) white grape juice optional substitute for cranberry
  • 2 cups pineapple juice chilled
  • 1 can (14 oz) coconut milk full fat or light, or use carton coconut drink
  • 2 liter lemon-lime soda Sprite or 7Up, chilled
Garnish
  • 1 cup fresh cranberries washed
  • 0.5 cup sanding sugar for rim
  • 0.5 cup shredded coconut finely chopped, for rim
  • 1 cup ice crushed or cubed

  • Large Pitcher or Punch Bowl
  • Ladle
  • Shallow bowls for rimming
  • Whisk

Method
 

  1. Prepare the glasses: Mix sanding sugar and shredded coconut on a shallow plate. Dip the rim of each glass in water or honey, then dip into the sugar-coconut mixture to coat.
  2. In a large punch bowl or pitcher, combine the white cranberry juice, pineapple juice, and coconut milk.
  3. Whisk vigorously to ensure the coconut milk is fully incorporated and smooth.
  4. Just before serving, slowly pour in the lemon-lime soda to preserve the carbonation. Stir gently.
  5. Garnish the punch bowl with fresh cranberries. They will float on top.
  6. Serve immediately over ice in the prepared glasses.

Notes

For an alcoholic version, add 1 cup of coconut rum or vodka to the pitcher.
