White Cheddar and Spinach Chicken Burgers

Ingredients
  

Burger Mixture
  • 1 lb ground chicken
  • 1 cup fresh spinach roughly chopped
  • 0.75 cup sharp white cheddar cheese cubed or shredded
  • 2 cloves garlic minced
  • 0.25 cup red onion finely diced
  • 1 tbsp olive oil plus more for cooking
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional
Assembly
  • 4 brioche buns
  • 1 cup arugula or lettuce
  • 1 tomato sliced
  • 4 tbsp mayonnaise or aioli

  • Large mixing bowl

Method
 

  1. Roughly chop the fresh spinach. If using frozen, ensure it is completely thawed and squeezed dry of all liquid.
  2. In a large bowl, combine ground chicken, chopped spinach, cheddar cheese, garlic, onion, olive oil, salt, pepper, and red pepper flakes.
  3. Gently mix with your hands until just combined. Do not overmix to avoid tough burgers.
  4. Divide the mixture into 4 equal portions and shape them into patties about 3/4 inch thick. Press a small thumbprint into the center of each.
  5. Heat a large skillet or grill pan over medium-high heat. Add a swirl of oil.
  6. Cook patties for 5-6 minutes per side, flipping carefully, until golden brown and internal temperature reaches 165°F (74°C).
  7. While burgers rest, toast the brioche buns in the pan for 1-2 minutes until golden.
  8. Assemble burgers with sauce, lettuce, tomato, and the chicken patty. Serve immediately.

Notes

Chill the formed patties for 20 minutes before cooking if they feel too soft to handle.
