Whipped Pink Lemonade

Ingredients
  

Whipped Topping
  • 1/2 cup heavy whipping cream very cold
  • 2 tbsp pink lemonade drink mix powder e.g., Country Time or Kool-Aid
Base Drink
  • 2 cups cold water, lemonade, or lemon-lime soda
  • 1 cup ice cubes
Garnish
  • 2 slices fresh lemon for the rim

Equipment

  • Hand mixer or stand mixer
  • Mixing Bowl
  • Serving glasses

Method
 

  1. Place your mixing bowl and mixer beaters in the freezer for 10 minutes to chill.
  2. Pour the very cold heavy whipping cream into the chilled bowl. Add the pink lemonade powder mix directly into the cream.
  3. Using a hand mixer, start beating on low speed for 30 seconds to moisten the powder.
  4. Increase the mixer speed to medium-high and whip for 2-3 minutes until thick, stiff peaks form. Do not overmix.
  5. Fill two clear glasses with ice cubes and pour in your cold water or clear soda base, filling about 3/4 of the way up.
  6. Spoon large dollops of the whipped pink lemonade foam directly on top of the iced base.
  7. Garnish the rim of each glass with a fresh lemon slice and serve immediately with a straw.

Notes

Ensure your heavy cream is extremely cold for the best and fastest whipping results. You can adjust the amount of lemonade powder to suit your sweetness preference.
