Watermelon Fruit Salad with Lime Mint Dressing

Ingredients
  

Fruit Base
  • 4 cups watermelon cubed, seedless
  • 2 cups strawberries hulled and halved
  • 1 cup raspberries fresh
  • 1.5 cups dark sweet cherries pitted and halved
Lime Mint Dressing
  • 2 tbsp fresh mint leaves finely chopped, plus extra for garnish
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey or agave syrup adjust to taste
  • 1 pinch flaky sea salt optional

  • Large serving bowl
  • Small bowl or jar for dressing

Method
 

  1. Wash all berries and cherries thoroughly and pat completely dry.
  2. Cut the watermelon into bite-sized cubes, hull and halve the strawberries, and pit and halve the cherries.
  3. In a large serving bowl, gently combine the watermelon, strawberries, cherries, and whole raspberries.
  4. In a small bowl, whisk together the freshly squeezed lime juice, honey, and chopped mint until the honey is dissolved.
  5. Pour the lime mint dressing over the fruit mixture and gently toss to coat everything evenly without crushing the berries.
  6. Cover and chill in the refrigerator for 15-30 minutes to allow the flavors to meld and juices to release.
  7. Garnish with additional fresh mint leaves and serve cold.

Notes

Best served on the same day it is made. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
