- Rinse quinoa thoroughly under cold water using a fine-mesh strainer.
- In a saucepan, bring quinoa, almond milk, vanilla, and salt to a boil. Reduce heat, cover, and simmer for 15 minutes until liquid is absorbed.
- While quinoa cooks, heat coconut oil in a skillet over medium heat. Add diced apples, cinnamon, and maple syrup.
- Sauté the apples for 5-7 minutes until soft and slightly caramelized.
- Transfer the cooked quinoa to a serving bowl.
- Top with the warm spiced apples and any pan juices.
- Dust generously with extra cinnamon, sprinkle with coconut flakes, and garnish with fresh mint. Serve warm.
Notes
You can prep the quinoa and apples ahead of time and reheat them in the morning with a splash of milk. Top with nuts or seeds for extra crunch.
