Ingredients
  

Sugar Cookie Crust
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp almond extract optional
  • 3 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
Fruit Decor
  • 1 pint strawberries washed, dried, sliced
  • 1 cup mandarin oranges drained well
  • 3 whole kiwis peeled and sliced
  • 1 cup green grapes halved and quartered
  • 0.5 cup blueberries washed and dried
  • 1 small green apple or bell pepper thinly sliced for seaweed
  • 1 tbsp candy eyeballs optional

Equipment

  • 10x15 inch rimmed baking sheet
  • Stand mixer or hand mixer
  • Mixing bowls
  • Offset spatula

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 10x15 inch rimmed baking sheet.
  2. Cream softened butter and granulated sugar until light and fluffy. Beat in egg, vanilla, and almond extract.
  3. Whisk together flour, baking powder, and salt. Gradually mix dry ingredients into the wet ingredients until just combined.
  4. Press the dough evenly into the bottom of the prepared baking sheet.
  5. Bake for 12-15 minutes until edges are barely golden. Let cool completely in the pan.
  6. Beat softened cream cheese and butter until smooth. Add vanilla, then gradually beat in powdered sugar until fluffy.
  7. Spread frosting over the completely cooled crust, creating wavy peaks with an offset spatula.
  8. Assemble fruit: Use strawberries and mandarins for fish, kiwis and grapes for turtles, blueberries for bubbles, and green apple strips for seaweed. Chill 1 hour before slicing.

Notes

Ensure all fruit is completely dry before placing it on the frosting to prevent color bleeding. Do not frost the crust while it is warm.
