Ingredients
  

Snow Ice Base
  • 3 cups whole milk or full-fat coconut milk
  • 0.5 cup water
  • 0.25 cup sweetened condensed milk adjust to taste
  • 1 tsp vanilla extract
Tropical Fruit Toppings
  • 1 cup strawberries hulled and quartered
  • 2 whole kiwis peeled and diced
  • 1 cup fresh pineapple diced
  • 0.5 cup sweet cherries pitted
Garnish
  • 0.25 cup shredded coconut sweetened or unsweetened
  • 0.33 cup caramel syrup or honey, for drizzling

Equipment

  • Shaved ice machine or high-powered blender
  • Ice cube trays or ice molds
  • Large serving plate or bowl

Method
 

  1. In a pitcher, whisk together the whole milk, water, sweetened condensed milk, and vanilla extract until smooth.
  2. Pour the mixture into ice cube trays or the specific molds for your ice shaver. Freeze until completely solid (4-6 hours or overnight).
  3. Wash, chop, and prepare all the fruit (strawberries, kiwi, pineapple, cherries). Keep them chilled in the refrigerator until ready to use.
  4. Once frozen, use your shaved ice machine or pulse the cubes in a high-powered blender to create fluffy snow ice.
  5. Quickly transfer the shaved ice to a large, chilled serving plate or bowl, shaping it into a tall mountain.
  6. Decorate the slopes of the ice mountain with the prepared fresh fruits.
  7. Generously drizzle the caramel syrup or honey all over the fruit and ice.
  8. Sprinkle the shredded coconut evenly over the top.
  9. Serve immediately with spoons and enjoy before it melts!

Notes

Work very quickly once you shave the ice to prevent it from melting. Chilling your serving bowls beforehand makes a big difference in hot weather.
