Ingredients
  

Chocolate Cupcakes
  • 1.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cup cocoa powder unsweetened
  • 1.5 tsp baking soda
  • 0.75 tsp baking powder
  • 2 eggs large
  • 0.75 cup buttermilk
  • 0.75 cup hot coffee or hot water
  • 0.25 cup vegetable oil
Peanut Butter Filling
  • 0.75 cup creamy peanut butter
  • 3 tbsp unsalted butter softened
  • 0.5 cup powdered sugar
  • 2 tbsp heavy cream
Frosting & Ganache
  • 1 cup unsalted butter softened
  • 1 cup peanut butter
  • 2.5 cups powdered sugar
  • 0.5 cup chocolate chips semi-sweet
  • 0.33 cup heavy cream for ganache

Method
 

  1. Preheat oven to 350°F (175°C). Whisk flour, sugar, cocoa, baking soda, and powder in a large bowl.
  2. Add eggs, buttermilk, hot coffee, oil, and vanilla. Mix until smooth.
  3. Bake in lined muffin tin for 18-20 mins. Cool completely.
  4. Beat peanut butter, butter, powdered sugar, and cream for filling. Core cupcakes and pipe filling inside.
  5. Whip butter, peanut butter, and sugar for frosting. Pipe onto filled cupcakes.
  6. Make ganache by pouring hot cream over chocolate chips. Stir until smooth, cool slightly, and drizzle over cupcakes.

Notes

Use processed smooth peanut butter for the best texture in the frosting and filling.
