Ingredients
  

Pancake Batter
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1.25 cups whole milk
  • 1 egg large
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract
Sandwich Filling
  • 4 breakfast sausage patties
  • 8 slices thick-cut bacon
  • 4 eggs large
  • 1 tbsp butter for scrambling
  • 4 slices American cheese
  • 0.25 cup maple syrup for drizzling

Equipment

  • Large Skillet or Griddle
  • Mixing bowls

Method
 

  1. Cook bacon in a skillet until crispy. Drain on paper towels and set aside.
  2. In the same skillet, cook the sausage patties until browned and cooked through. Keep warm.
  3. Whisk dry pancake ingredients in one bowl. Whisk wet ingredients in another. Combine gently until just mixed.
  4. Cook pancakes on a buttered griddle using 1/4 cup of batter per pancake until golden brown. You need 8 pancakes.
  5. Whisk the 4 eggs. Melt butter in a skillet and soft-scramble the eggs. Season with salt and pepper.
  6. Assemble sandwiches: Place one pancake down, top with a slice of cheese, a hot sausage patty, scrambled eggs, and bacon.
  7. Drizzle with maple syrup and top with a second pancake. Serve immediately.

Notes

To meal prep, assemble the sandwiches, wrap tightly in foil, and freeze. Reheat in the microwave or air fryer.
