Method
- Cook bacon in a skillet until crispy. Drain on paper towels and set aside.
- In the same skillet, cook the sausage patties until browned and cooked through. Keep warm.
- Whisk dry pancake ingredients in one bowl. Whisk wet ingredients in another. Combine gently until just mixed.
- Cook pancakes on a buttered griddle using 1/4 cup of batter per pancake until golden brown. You need 8 pancakes.
- Whisk the 4 eggs. Melt butter in a skillet and soft-scramble the eggs. Season with salt and pepper.
- Assemble sandwiches: Place one pancake down, top with a slice of cheese, a hot sausage patty, scrambled eggs, and bacon.
- Drizzle with maple syrup and top with a second pancake. Serve immediately.
Notes
To meal prep, assemble the sandwiches, wrap tightly in foil, and freeze. Reheat in the microwave or air fryer.
