Ingredients
  

Compote Ingredients
  • 1 lb fresh strawberries hulled and quartered
  • 0.33 cup granulated sugar adjust to 1/2 cup if berries are tart
  • 1 tbsp fresh lemon juice
  • 1 tsp pure vanilla extract
  • 0.5 tsp lemon zest optional

  • Medium saucepan
  • Wooden spoon or spatula
  • Glass Jar for storage

Method
 

  1. Wash, hull, and quarter the strawberries. Place them in a medium saucepan.
  2. Add the sugar and lemon juice to the berries. Stir to combine. (Optional: let sit for 10 minutes to macerate).
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil.
  4. Reduce heat to medium-low and let simmer for 10-15 minutes, stirring occasionally, until the berries break down and the sauce thickens and looks syrupy.
  5. Remove from heat and stir in the vanilla extract and lemon zest (if using).
  6. Allow to cool slightly to thicken further before serving, or cool completely before storing in an airtight jar in the refrigerator.

Notes

The compote will appear slightly thin when hot but will thicken considerably as it cools. For a smoother sauce, mash the berries with a potato masher while simmering.
