Ingredients

Meat Sauce
  • 1 lb ground beef (85/15)
  • 0.5 lb Italian sausage casings removed
  • 1 onion diced
  • 4 cloves garlic minced
  • 48 oz marinara sauce 2 jars
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
Pasta & Cheese
  • 1 lb ziti pasta or penne
  • 15 oz ricotta cheese whole milk
  • 1 egg large
  • 3 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 0.25 cup fresh parsley chopped

Equipment

  • Large Pot
  • Large Skillet or Dutch Oven
  • 9x13 Baking Dish
  • Mixing Bowl
  • Cheese Grater

Method

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Boil ziti in salted water for 2 minutes less than package directions (very al dente). Drain and toss with a little oil.
  3. In a large skillet, brown ground beef and sausage over medium-high heat. Add onion and cook until soft. Stir in garlic, tomato paste, and spices.
  4. Add marinara sauce to the meat, bring to a simmer, then reduce heat and cook for 10 minutes.
  5. In a bowl, mix ricotta, egg, 1/2 cup Parmesan, and parsley until smooth.
  6. Combine cooked pasta with the meat sauce. Pour half into the baking dish.
  7. Dollop the ricotta mixture over the pasta layer and sprinkle with 1 cup mozzarella.
  8. Top with remaining pasta mixture. Cover with remaining mozzarella and Parmesan.
  9. Bake covered with foil for 20 minutes. Remove foil and bake 15-20 minutes more until bubbly and golden.
  10. Let rest for 15 minutes before serving to allow sauce to set.

Notes

For extra crispy edges, broil for the last 2 minutes, but watch closely!
