Tropical Rainbow Slushy Cocktail

Ingredients
  

Yellow Bottom Layer
  • 1 cup frozen mango chunks
  • 0.5 cup pineapple juice
  • 2 oz white rum or coconut rum
  • 1 cup ice cubes
Magenta Middle Layer
  • 1 cup frozen dragon fruit or strawberries
  • 0.25 cup lime juice freshly squeezed
  • 1 oz simple syrup optional, depending on fruit sweetness
  • 2 oz white rum
  • 1 cup ice cubes
Blue Top Layer
  • 4 oz Blue CuraƧao liqueur
  • 2 oz lemonade or limeade
  • 1 oz vodka or white rum
  • 2 cups ice cubes extra ice for thickness
Garnish
  • 4 pineapple fronds (leaves) cleaned
  • 2 slices orange

Equipment

  • High-powered blender
  • Tall Collins or Hurricane Glasses
  • Spoon for layering

Method
 

  1. Place two tall glasses in the freezer to chill before starting.
  2. Blend all 'Yellow Bottom Layer' ingredients on high until smooth and thick like sorbet.
  3. Pour the yellow mixture into the bottom third of the chilled glasses. Freeze for 15 minutes to firm the surface.
  4. Rinse blender. Blend all 'Magenta Middle Layer' ingredients until smooth.
  5. Gently spoon the magenta mixture over the back of a spoon onto the frozen yellow layer, filling to two-thirds. Freeze for another 15 minutes.
  6. Rinse blender. Blend all 'Blue Top Layer' ingredients until icy and thick.
  7. Gently spoon the blue mixture to the top of the glasses. Garnish with pineapple fronds and orange slices. Serve immediately with a straw.

Notes

For clean layers, do not skip the freezing steps between pours. Ensure each layer is thick; add more ice if runny.
