Tropical Lava Flow Drink (Miami Vice)

A stunning, layered frozen tropical drink featuring a bright red strawberry base swirling into a creamy, frosty pineapple and coconut blend. Perfect as a cocktail or mocktail!

Ingredients
  

Strawberry (Lava) Layer
  • 1 cup frozen strawberries
  • 0.5 cup fresh strawberries hulled
  • 2 tbsp fresh lime juice
  • 1 tbsp simple syrup or agave optional
  • 2 oz white rum optional (omit for mocktail)
Piña Colada (Tropical) Layer
  • 2 cups frozen pineapple chunks
  • 0.5 cup pineapple juice chilled
  • 0.5 cup Cream of Coconut e.g., Coco López, well stirred
  • 2 oz white rum or coconut rum optional (omit for mocktail)
  • 0.5 cup crushed ice only if needed to thicken
Garnishes
  • 0.5 cup fresh whipped cream
  • 2 whole fresh strawberries stems attached
  • 2 wedges fresh pineapple skin attached

Equipment

  • High-powered blender
  • Tall glasses (Hurricane or Highball)
  • Measuring cups and spoons

Method
 

  1. Chill two tall glasses in the freezer for at least 30 minutes.
  2. In a blender, combine the frozen strawberries, fresh strawberries, lime juice, simple syrup, and rum (if using). Blend until a thick, smooth puree forms.
  3. Divide the strawberry puree evenly into the bottom of the chilled glasses. Use a spoon to smear a little puree up the inside walls of the glasses. Set glasses aside.
  4. Rinse the blender pitcher clean.
  5. Add the frozen pineapple chunks, pineapple juice, Cream of Coconut, and rum (if using) to the blender. Blend on high until thick and incredibly smooth. Add crushed ice only if the mixture is too thin.
  6. Slowly pour the pineapple-coconut mixture directly into the center of the strawberry puree in the glasses. The red puree will flow up the sides.
  7. Top each glass generously with whipped cream. Garnish the rims with a fresh strawberry and a pineapple wedge. Add a straw and serve immediately.

Notes

To ensure distinct layers, make sure both mixtures are very thick. If they are too watery, they will blend together into a pink drink. Use frozen fruit instead of ice whenever possible for the best texture.
