Tropical Lava Flow

A stunning frozen tropical drink blending strawberry puree and creamy coconut-pineapple slush. The perfect vacation-style cocktail or mocktail.

Ingredients
  

Strawberry Base (Lava)
  • 1 cup frozen strawberries
  • 1 oz light rum optional, or use water/juice
  • 1 tbsp granulated sugar
Coconut Base (Flow)
  • 2 oz coconut cream sweetened like Coco Lopez
  • 2 oz pineapple juice
  • 0.5 cup frozen pineapple chunks
  • 1 small banana peeled
  • 1 cup crushed ice
Garnish
  • 2 wedges fresh pineapple
  • 2 whole strawberries
  • 0.5 cup whipped cream

Equipment

  • High-powered blender
  • Hurricane glasses
  • Straws

Method
 

  1. Place frozen strawberries, rum (or water), and sugar into a blender. Blend until smooth and thick.
  2. Pour the strawberry mixture into a pitcher or separate bowl. Rinse the blender pitcher thoroughly.
  3. Add coconut cream, pineapple juice, frozen pineapple, banana, and crushed ice to the clean blender. Blend until frosty and smooth.
  4. Pour the red strawberry mixture into the bottom of two tall glasses.
  5. Slowly pour the white coconut mixture into the center of the red mixture. The red will rise up the sides creating the lava flow effect.
  6. Top with whipped cream and garnish with a pineapple wedge and fresh strawberry.

Notes

For a mocktail, simply replace the rum with water or apple juice.
