Ingredients

Hot Chocolate Base
  • 2 cups whole milk essential for creaminess
  • 0.5 cup heavy cream
  • 2 tbsp granulated sugar adjust to taste
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp cornstarch for thickness
  • 0.5 cup semi-sweet chocolate chips or chopped bar
  • 1 tsp vanilla extract
  • 1 pinch salt
Toppings
  • 0.5 cup whipped cream freshly whipped
  • 1 pinch ground cinnamon for garnish

Equipment

  • Saucepan
  • Whisk
  • Ladle
  • Mugs

Method

  1. In a small bowl, whisk together sugar, cocoa powder, and cornstarch until smooth.
  2. In a saucepan over medium heat, combine milk and heavy cream. Heat until steaming (do not boil).
  3. Whisk the dry sugar/cocoa mixture into the hot milk until fully dissolved.
  4. Reduce heat to low. Add chocolate chips and stir constantly until melted and glossy.
  5. Simmer gently for 2-3 minutes while stirring. The mixture will thicken and coat the back of a spoon.
  6. Remove from heat. Stir in vanilla extract and salt.
  7. Pour into mugs, top with a generous mound of whipped cream, and dust with cinnamon.

Notes

For an even thicker 'Italian style' drink, increase cornstarch to 2 teaspoons.
