- Wash the sweet potato and pierce with a fork. Microwave on high for 5-7 minutes until tender (or bake at 400°F for 45 mins).
- Slice open the potato, scoop out the flesh into a bowl, and mash with a fork. Stir in cinnamon and maple syrup if using.
- Add a dollop of Greek yogurt on top of the warm mashed potato.
- Top with granola and fresh blueberries.
- Drizzle generously with almond butter and sprinkle with sesame seeds.
- Serve immediately while the potato is still warm.
