Ingredients

Pizza Base
  • 1 lb pizza dough room temperature
  • 1 tbsp extra virgin olive oil
  • 0.5 cup fig jam or fig preserves
Toppings
  • 1 cup shredded mozzarella cheese low-moisture
  • 4 oz prosciutto thinly sliced
  • 3 oz goat cheese crumbled
  • 1 handful fresh arugula optional garnish

Equipment

  • Pizza Stone or Baking Sheet
  • Pizza Peel
  • Parchment paper

Method

  1. Preheat oven with a pizza stone inside to its highest setting (500°F - 550°F / 260°C - 290°C) for at least 45 minutes.
  2. Stretch the room temperature pizza dough into a 12 to 14-inch circle on a piece of parchment paper.
  3. Brush the edges of the dough lightly with extra virgin olive oil.
  4. Spread the fig jam evenly over the base of the dough, leaving a 1-inch border.
  5. Sprinkle the shredded mozzarella cheese evenly over the fig jam.
  6. Transfer the pizza to the hot stone and bake for 8 to 12 minutes until the crust is golden and cheese is bubbling.
  7. Remove the pizza from the oven and let rest for 1-2 minutes.
  8. Drape the thinly sliced prosciutto over the hot pizza and scatter the crumbled goat cheese on top. Garnish with arugula if desired, slice, and serve.

Notes

Ensure goat cheese and prosciutto are added AFTER baking to preserve their delicate textures.
