Ingredients
  

Burger Bowl Base
  • 2 large sweet potatoes peeled and diced
  • 2 tbsp olive oil
  • 1 lb lean ground beef or ground turkey
  • 1 tsp smoked paprika
  • 1 tsp garlic powder divided
  • 1 tsp onion powder
  • 4 cups romaine lettuce shredded
  • 1 cup cherry tomatoes quartered
  • 0.5 cup red onion thinly sliced
  • 0.5 cup dill pickles sliced
Burger Sauce
  • 0.33 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1-2 tbsp dill pickle juice

Method
 

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, half the garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  2. In a small bowl, whisk together mayonnaise, ketchup, mustard, and pickle juice until smooth to create the burger sauce.
  3. Heat a large skillet over medium-high heat. Add ground beef, season with remaining garlic powder, onion powder, salt, and pepper. Cook until browned and crispy at the edges, about 7-10 minutes. Drain excess fat.
  4. Assemble the bowls by layering shredded lettuce, warm roasted sweet potatoes, and hot browned ground beef.
  5. Top with quartered cherry tomatoes, sliced red onions, and dill pickles.
  6. Drizzle generously with the prepared burger sauce and serve immediately.
