Ingredients
  

Base
  • 1 cup sour cream or plain Greek yogurt full fat for best texture
  • 0.25 cup mayonnaise
Flavor
  • 1 bunch fresh cilantro stems and leaves, rinsed
  • 2-3 cloves garlic peeled
  • 2 tbsp lime juice freshly squeezed
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

Method
 

  1. Wash the cilantro thoroughly and trim off the bottom inch of the tough stems. The upper stems are fine to use.
  2. Add sour cream, mayonnaise, and lime juice to the blender first (liquids at the bottom help blending).
  3. Top with the cilantro bunch, garlic cloves, salt, and pepper.
  4. Blend on high speed for 45-60 seconds until the sauce is smooth and pale green with tiny herb flecks.
  5. Taste and adjust seasoning. Add more lime for tartness or salt if needed.
  6. Pour into a jar and refrigerate for at least 30 minutes to let flavors meld before serving.

Notes

Store in the fridge for up to 1 week. Stir before using if separation occurs.
