Method
- Wash the cilantro thoroughly and trim off the bottom inch of the tough stems. The upper stems are fine to use.
- Add sour cream, mayonnaise, and lime juice to the blender first (liquids at the bottom help blending).
- Top with the cilantro bunch, garlic cloves, salt, and pepper.
- Blend on high speed for 45-60 seconds until the sauce is smooth and pale green with tiny herb flecks.
- Taste and adjust seasoning. Add more lime for tartness or salt if needed.
- Pour into a jar and refrigerate for at least 30 minutes to let flavors meld before serving.
Notes
Store in the fridge for up to 1 week. Stir before using if separation occurs.
