- Prepare your coupe glass by rubbing a lemon wedge along the rim. Dip the wet rim into the colored cocktail sugar until coated. Set aside.
- In a cocktail shaker, combine the Empress Indigo Gin, fresh lemon juice, and plum liqueur.
- Fill the shaker with ice, seal, and shake vigorously for 10-15 seconds until well chilled.
- Strain the chilled mixture into the prepared sugar-rimmed coupe glass.
- Carefully top with the chilled sparkling wine. Serve immediately and enjoy!
