- Take a chilled coupe glass and rub a fresh lemon wedge around the outside rim to moisten it.
- Pour the colorful sugar crystals onto a small plate and gently dip the moistened rim into the sugar to coat it evenly. Set glass aside.
- In a cocktail shaker, combine the Empress Indigo Gin, fresh lemon juice, and plum liqueur.
- Fill the shaker with ice, secure the lid, and shake vigorously for 10-15 seconds until well chilled.
- Strain the vibrant liquid into your prepared sugar-rimmed coupe glass.
- Carefully top with chilled sparkling wine. Serve immediately and enjoy!
