Ingredients
  

Glass Preparation
  • 1 wedge fresh lemon for rimming
  • 1 tbsp colorful sugar crystals pastel pink, blue, yellow
Cocktail
  • 1.5 oz Empress Indigo Gin
  • 0.5 oz fresh lemon juice
  • 0.75 oz plum liqueur
  • 3 oz sparkling wine chilled
  • 1 cup ice for shaking

Equipment

  • Cocktail Shaker
  • Coupe Glass
  • Jigger
  • Hawthorne strainer

Method
 

  1. Take a chilled coupe glass and rub a fresh lemon wedge around the outside rim to moisten it.
  2. Pour the colorful sugar crystals onto a small plate and gently dip the moistened rim into the sugar to coat it evenly. Set glass aside.
  3. In a cocktail shaker, combine the Empress Indigo Gin, fresh lemon juice, and plum liqueur.
  4. Fill the shaker with ice, secure the lid, and shake vigorously for 10-15 seconds until well chilled.
  5. Strain the vibrant liquid into your prepared sugar-rimmed coupe glass.
  6. Carefully top with chilled sparkling wine. Serve immediately and enjoy!

Notes

Always use fresh lemon juice; it provides the acidity needed to change the gin's color to vibrant purple.
