Strawberry Watermelon Milk Tea

Ingredients
  

Watermelon Jelly
  • 1 cup watermelon juice strained
  • 1 packet unflavored gelatin
  • 2 tbsp sugar
  • 1 tsp black sesame seeds for seeds
  • 0.25 cup lime juice with green coloring
Strawberry Base
  • 1 cup fresh strawberries diced
  • 0.25 cup sugar
  • 1 tbsp lemon juice
Tea Assembly
  • 1 cup Jasmine green tea brewed and chilled
  • 0.5 cup whole milk
  • 1 cup ice cubes

Equipment

  • Small Saucepan
  • Fine-mesh strainer
  • Silicone triangle molds
  • Tall Glasses

Method
 

  1. Make watermelon jelly by dissolving gelatin in sweetened watermelon juice; pour into molds with sesame seeds and chill until firm with a green lime layer.
  2. Simmer strawberries, sugar, and lemon juice until thick; strain to create a smooth syrup and cool completely.
  3. Brew Jasmine tea and let it chill in the refrigerator.
  4. Coat the inside of a glass with strawberry syrup, then fill with ice and a few watermelon jellies.
  5. Pour in the chilled tea and top with milk, stirring gently to create a marble effect.
  6. Garnish with a large watermelon jelly wedge and serve with a wide straw.

Notes

Use agar-agar for a vegan jelly version that stays firm at room temperature.
