Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened to room temp
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream very cold
Layers & Toppings
  • 20 Oreo cookies crushed
  • 2 tbsp unsalted butter melted (optional for crust)
  • 2 cups fresh strawberries diced
  • 2 tbsp granulated sugar for strawberries
  • 6 whole Oreos for garnish

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Dessert cups or jars
  • Piping bag or Ziploc

Method
 

  1. Wash strawberries, dice them, and toss with granulated sugar in a bowl. Set aside for 20 minutes to macerate and release juices.
  2. Crush Oreos in a food processor or ziplock bag until fine crumbs form. (Optional: mix with melted butter for a firmer base).
  3. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
  4. In a separate cold bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until combined and fluffy.
  6. Spoon or pipe a layer of cheesecake mixture into the bottom of cups (or start with crumbs if preferred).
  7. Add a layer of Oreo crumbs, followed by a layer of macerated strawberries with their juice.
  8. Repeat layers until the cup is full. Top with a final swirl of cream, a whole Oreo, and a strawberry slice.
  9. Refrigerate for at least 1 hour before serving to let flavors meld.

Notes

Keep chilled until serving. Best eaten within 2 days.
