Ingredients
  

Strawberry Syrup
  • 2 cups fresh strawberries hulled and chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tsp lemon juice optional
Soda Assembly (Per Drink)
  • 2 cups crushed ice or pebble ice
  • 0.25 cup strawberry syrup chilled
  • 6-8 oz club soda chilled
  • 2-3 tbsp heavy whipping cream or half and half
Garnish
  • 1 swirl whipped cream
  • 0.5 fresh strawberry

Method
 

  1. To make the syrup: In a saucepan, combine chopped strawberries, sugar, and water. Bring to a boil over medium-high heat.
  2. Reduce heat to low and simmer for 10-15 minutes, mashing the berries gently until the liquid is deep red and the fruit is soft.
  3. Strain the mixture through a fine-mesh sieve into a jar, pressing gently to extract liquid. Discard pulp. Stir in lemon juice if using, and let the syrup cool completely in the fridge.
  4. To assemble the drink: Fill a tall glass to the very top with crushed ice.
  5. Pour 1/4 cup of the chilled homemade strawberry syrup over the ice.
  6. Slowly pour chilled club soda over the ice until the glass is almost full, mixing with the red syrup.
  7. Gently pour the heavy cream over the top to create a marbled, creamy effect.
  8. Top with a generous swirl of whipped cream, a fresh strawberry half, and a paper straw. Serve immediately and stir before drinking.

Notes

Using crushed or pebble ice is highly recommended over large cubes, as it creates a thick, slushy texture that holds the cream beautifully. Use heavy cream to prevent curdling when it mixes with the acidic fruit syrup.
