Strawberry Coconut Cooler

A refreshing, frosty, pastel-pink tropical drink blending fresh sweet strawberries with rich, creamy coconut milk and hydrating coconut water. Perfect as a summer mocktail or spiked with rum!

Ingredients
  

Drink Base
  • 1 cup fresh strawberries hulled and halved
  • 0.5 cup full-fat coconut milk canned, shaken well
  • 0.5 cup coconut water
  • 1 tbsp fresh lime juice
  • 1-2 tbsp agave nectar or simple syrup, to taste
For Serving
  • 2 cups crushed ice or enough to fill 2 glasses
  • 2 slices fresh strawberry for garnish
  • 2 slices dried citrus wheels lime or lemon, for garnish

Equipment

  • Blender
  • Citrus Juicer
  • Hurricane or stemless wine glasses

Method
 

  1. Wash and hull the fresh strawberries, cutting larger ones in half.
  2. In a blender, combine the strawberries, coconut milk, coconut water, fresh lime juice, and agave nectar.
  3. Blend on high for 30-45 seconds until the mixture is completely smooth and frothy. Taste and add more sweetener or lime juice if desired.
  4. Fill two large serving glasses completely to the brim with crushed ice.
  5. Pour the blended strawberry coconut mixture evenly over the crushed ice in both glasses.
  6. Garnish each glass with a fresh strawberry slice and a dried citrus wheel. Serve immediately and enjoy cold!

Notes

To make this a cocktail, add 1.5 oz of white rum, coconut rum, or vodka per serving before blending. You can store the blended liquid base in the fridge for up to 24 hours before pouring over ice.
