Method
- Mix cream cheese, powdered sugar, and 1 tsp vanilla until smooth.
- Scoop 1.5 tsp dollops of filling onto a parchment-lined sheet and freeze for at least 45 minutes until solid.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugars until fluffy. Add egg, vanilla, strawberry extract, and food coloring.
- Stir in flour, baking powder, and salt until a soft dough forms.
- Take about 1.5 tbsp of dough, flatten it, and place a frozen cheese ball in the center.
- Wrap dough around the filling, seal edges well, roll into a ball, then roll in granulated sugar.
- Bake for 11-13 minutes until puffy and set. Cool on baking sheet for 10 minutes before moving to wire rack.

Store in refrigerator due to cream cheese filling.
