Strawberry Banana Mushroom Forest

Ingredients
  

Fruit Base
  • 3 firm, ripe bananas
  • 1 pint fresh strawberries large size preferred
  • 2 kiwis peeled
  • 0.25 cup fresh cranberries or pomegranate arils
Decorations
  • 2 tbsp strawberry or raspberry jam
  • 2 tbsp powdered sugar
  • 1 handful edible flowers pansies or chamomile
  • 1 tbsp lemon juice optional, for bananas

Equipment

  • Cutting board
  • Sharp Knife
  • Fine mesh sieve
  • Serving platter

Method
 

  1. Spread a thin smear of jam across the center of your serving plate to create a base.
  2. Slice peeled kiwis into rounds and lay them flat around and over the jam smear to act as moss/grass.
  3. Peel bananas, cut the ends flat, and slice crosswise into varying lengths (2 to 4 inches tall). Optionally brush with lemon juice.
  4. Stand the banana pieces upright on the plate.
  5. Wash, dry, and hull the strawberries, cutting a straight, shallow cavity at the top to act as a cap.
  6. Gently place one strawberry cap on top of each standing banana stem.
  7. Scatter cranberries and edible flowers around the base of the fruit forest.
  8. Using a fine-mesh sieve, gently dust powdered sugar over the entire arrangement to look like snow. Serve immediately.

Notes

Assemble immediately before serving as the powdered sugar will eventually melt into the moist fruit and bananas will brown over time.
