Ingredients
  

Drink Components
  • 2 large oranges Cara Cara or Valencia, washed thoroughly
  • 1 liter sparkling water or seltzer deeply chilled
  • 2 cups ice cubes preferably clear ice
  • 1 sprig fresh mint or rosemary optional garnish
  • 1 tsp agave or simple syrup optional

Equipment

  • Large Glass Pitcher or Highball Glasses
  • Chef's Knife
  • Cutting board
  • Muddler or Wooden Spoon

Method
 

  1. Wash the oranges to remove any wax. Cut one half to reserve for juice, and slice the rest into thin, uniform wheels.
  2. Place half of the orange wheels into the bottom of your glasses. If using sweetener, add it now. Gently muddle to release oils and juices.
  3. Fill the glasses halfway with ice.
  4. Slide the remaining orange wheels down the sides of the glasses for a beautiful visual presentation.
  5. Squeeze the reserved orange half directly over the ice for an instant flavor boost.
  6. Slowly pour the deeply chilled sparkling water over the ice and fruit.
  7. Give a gentle stir, garnish with a slapped sprig of fresh mint or rosemary, and serve immediately.

Notes

To prevent the water from turning bitter, remove the orange peels if you plan to let the drink sit for more than a few hours. Always use deeply chilled sparkling water to preserve the bubbles.
