Ingredients
  

The Punch
  • 1 cup pineapple juice chilled
  • 0.5 cup coconut cream unsweetened, thick part from can
  • 0.5 cup ginger ale chilled
  • 1 cup crushed ice
Garnish & Rim
  • 2 tbsp white sugar or desiccated coconut for rim
  • 2 sprigs rosemary fresh
  • 6 cranberries fresh or frozen
  • 2 wedges fresh pineapple

Equipment

  • Cocktail Shaker or Pitcher
  • Glasses
  • Saucers for rimming

Method
 

  1. Prepare the glasses by dipping the rims in a shallow dish of water or pineapple juice, then dipping them into sugar or desiccated coconut to create a 'snowy' look.
  2. In a shaker or pitcher, combine the pineapple juice and coconut cream. Stir or shake vigorously until the mixture is smooth and creamy.
  3. Fill the prepared glasses with crushed ice.
  4. Pour the pineapple-coconut mixture over the ice, filling the glass about 3/4 full.
  5. Top with ginger ale for a fizzy finish. Stir gently to combine.
  6. Garnish with a pineapple wedge, fresh cranberries, and a sprig of rosemary. Serve immediately.

Notes

For an alcoholic version, add 1-2 oz of white rum or vodka.
