Method
- Prepare the glasses by dipping the rims in a shallow dish of water or pineapple juice, then dipping them into sugar or desiccated coconut to create a 'snowy' look.
- In a shaker or pitcher, combine the pineapple juice and coconut cream. Stir or shake vigorously until the mixture is smooth and creamy.
- Fill the prepared glasses with crushed ice.
- Pour the pineapple-coconut mixture over the ice, filling the glass about 3/4 full.
- Top with ginger ale for a fizzy finish. Stir gently to combine.
- Garnish with a pineapple wedge, fresh cranberries, and a sprig of rosemary. Serve immediately.
Notes
For an alcoholic version, add 1-2 oz of white rum or vodka.
