- Place chipotle peppers, adobo sauce, garlic cloves, lime juice, and spices into a blender or food processor.
- Pulse until the peppers and garlic are broken down into a rough paste.
- Add the sour cream and mayonnaise to the blender.
- Blend on high until the sauce is completely smooth and a consistent orange color.
- Taste and adjust salt or lime juice if necessary.
- Transfer to a jar and refrigerate for at least 30 minutes to let flavors meld before serving.
Notes
For a lighter version, swap sour cream for Greek yogurt. Add honey for a sweet kick.
