Slow Cooker Cheesy Mozzarella Chicken

Ingredients
  

Chicken & Seasoning
  • 2 lbs boneless skinless chicken breasts
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil optional for searing
Sauce & Toppings
  • 24 oz marinara sauce jarred or homemade
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped

  • Small mixing bowl

Method
 

  1. Pat chicken breasts dry. In a small bowl, mix Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Rub the seasoning mixture evenly over both sides of the chicken breasts.
  3. Optional: Heat olive oil in a skillet over medium-high heat and sear chicken for 2 minutes per side until browned but not cooked through.
  4. Pour 1/2 cup of marinara sauce into the bottom of the slow cooker.
  5. Place chicken breasts into the slow cooker and pour the remaining sauce over them.
  6. Cover and cook on LOW for 5-6 hours or HIGH for 2.5-3 hours, until chicken reaches 165°F.
  7. Sprinkle mozzarella and Parmesan cheese over the chicken. Cover and let sit on warm for 10-15 minutes until melted.
  8. Garnish with fresh parsley and serve warm.

Notes

For browned cheese, place the ceramic insert in the oven under the broiler for 3 minutes after cooking.
