- Pat chicken breasts dry. In a small bowl, mix Italian seasoning, garlic powder, onion powder, salt, and pepper.
- Rub the seasoning mixture evenly over both sides of the chicken breasts.
- Optional: Heat olive oil in a skillet over medium-high heat and sear chicken for 2 minutes per side until browned but not cooked through.
- Pour 1/2 cup of marinara sauce into the bottom of the slow cooker.
- Place chicken breasts into the slow cooker and pour the remaining sauce over them.
- Cover and cook on LOW for 5-6 hours or HIGH for 2.5-3 hours, until chicken reaches 165°F.
- Sprinkle mozzarella and Parmesan cheese over the chicken. Cover and let sit on warm for 10-15 minutes until melted.
- Garnish with fresh parsley and serve warm.
Notes
For browned cheese, place the ceramic insert in the oven under the broiler for 3 minutes after cooking.
