Method
- Place a pizza stone in the oven and preheat to 500°F (260°C) for at least 45 minutes.
- In a small saucepan, gently warm the honey and red pepper flakes over low heat. Set aside to steep.
- In a skillet, cook the Italian sausage over medium heat, breaking it into small chunks until browned. Drain excess fat.
- Stretch the pizza dough into a 12-14 inch circle on a floured pizza peel or parchment paper.
- Brush the crust edges with olive oil. Spread pizza sauce evenly over the dough.
- Top with shredded mozzarella, cooked sausage chunks, and small dollops of ricotta cheese.
- Transfer the pizza to the hot stone in the oven. Bake for 10-14 minutes until the crust is blistered and cheese is bubbly.
- Remove from oven. Immediately top with grated Parmesan, fresh thyme, and chopped rosemary.
- Drizzle generously with the hot honey right before slicing and serving.
Notes
Strain your ricotta for an hour before using if it appears very wet, to prevent a soggy pizza crust.
