  • 2 large sweet potatoes scrubbed, unpeeled
  • 3 tbsp extra-virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly cracked
  • 0.5 tsp garlic powder optional

  • 4 oz feta cheese block, crumbled
  • 3 tbsp honey
  • 1 tbsp fresh thyme leaves chopped
  • 1 pinch flaky sea salt for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the well-scrubbed sweet potatoes crosswise into thick 3/4-inch to 1-inch rounds.
  3. Place the rounds on a baking sheet. Drizzle with olive oil and sprinkle with kosher salt, pepper, and garlic powder. Toss to coat evenly and spread into a single layer.
  4. Roast for 20 minutes, then remove from the oven and carefully flip each round with a spatula.
  5. Return to the oven and roast for another 10-15 minutes until fork-tender and the edges are caramelized.
  6. Transfer the hot sweet potato rounds to a serving platter.
  7. Immediately top with crumbled feta cheese so the heat softens it slightly. Drizzle generously with honey, sprinkle with fresh thyme and flaky sea salt. Serve hot.

Notes

For an extra kick of flavor, infuse the honey with a pinch of red pepper flakes before drizzling.
