Ingredients
  

Potatoes
  • 3 large sweet potatoes scrubbed and sliced into 1/2 inch rounds
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Toppings
  • 2 tbsp honey or hot honey for spice
  • 0.5 cup feta cheese crumbled from block
  • 1 tbsp fresh thyme leaves stripped from stems

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash sweet potatoes thoroughly. Slice into uniform rounds, about 1/2 inch thick.
  3. In a large bowl, toss sweet potato rounds with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Arrange rounds in a single layer on the baking sheet without overcrowding.
  5. Roast for 15-20 minutes, then flip each round over. Roast for another 10-15 minutes until tender and caramelized on edges.
  6. Transfer to a serving platter. Immediately drizzle with honey and top with crumbled feta and fresh thyme.
  7. Serve warm.

Notes

For best results, buy a block of feta in brine and crumble it yourself for a creamier texture.
