Method
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Wash sweet potatoes thoroughly. Slice into uniform rounds, about 1/2 inch thick.
- In a large bowl, toss sweet potato rounds with olive oil, garlic powder, salt, and pepper until evenly coated.
- Arrange rounds in a single layer on the baking sheet without overcrowding.
- Roast for 15-20 minutes, then flip each round over. Roast for another 10-15 minutes until tender and caramelized on edges.
- Transfer to a serving platter. Immediately drizzle with honey and top with crumbled feta and fresh thyme.
- Serve warm.
Notes
For best results, buy a block of feta in brine and crumble it yourself for a creamier texture.
