- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Slice the sweet potatoes into uniform rounds, about ½ inch thick. Leave skins on for texture if desired.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange the rounds in a single layer on the baking sheet without overcrowding.
- Roast for 20-25 minutes, flipping halfway through, until tender and caramelized on the edges.
- Remove from oven and immediately transfer to a serving dish.
- While hot, top with crumbled feta cheese, drizzle with honey, and garnish with fresh thyme leaves.
- Serve warm immediately.
Notes
For a spicy kick, add a pinch of cayenne pepper to the spice mix or use hot honey.
