Ingredients

Strawberry Slush Base
  • 2 cups strawberries fresh or frozen, hulled
  • 2 tbsp granulated sugar or honey adjust to taste
  • 1 cup crushed ice
  • 0.5 cup cold water or sparkling water
  • 1 tbsp lemon juice freshly squeezed
Whipped Cream Topping
  • 0.5 cup heavy whipping cream cold
  • 1 tbsp powdered sugar
  • 0.5 tsp vanilla extract
Garnish
  • 2 whole fresh strawberries for rim of glass
  • 2 tbsp strawberry syrup optional, for drizzling

Equipment

  • High-powered blender
  • Hand mixer or whisk
  • Tall serving glasses
  • Reusable straws

Method

  1. Wash, hull, and slice the strawberries. If using fresh berries, toss with sugar and let sit for 10 minutes.
  2. In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside in the fridge.
  3. In a blender, combine the strawberries, crushed ice, cold water, and lemon juice.
  4. Blend on medium-high speed until the mixture reaches a smooth, slushy consistency.
  5. Optional: Drizzle strawberry syrup down the inside of your tall serving glasses.
  6. Pour the strawberry slush into the glasses, leaving room at the top.
  7. Top generously with the prepared whipped cream.
  8. Garnish with a fresh strawberry on the rim, a drizzle of syrup, and serve immediately with a straw.

Notes

If using frozen strawberries, you may need less ice and a little extra water to get the blender moving. Serve immediately for the best icy texture.
