Quick & Easy Greek Chicken Flatbread

Ingredients
  

Chicken & Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized chunks
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 2 cloves garlic minced
Flatbread & Toppings
  • 4 soft flatbreads Naan or Greek pita
  • 1 cup tzatziki sauce
  • 1 cup cherry tomatoes halved
  • 0.5 cup English cucumber thinly sliced
  • 0.25 cup red onion thinly sliced
  • 0.25 cup Kalamata olives pitted and halved
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. In a bowl, toss the chicken chunks with olive oil, lemon juice, oregano, garlic, salt, and pepper until well coated.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
  3. Warm the flatbreads in the oven, toaster, or a dry skillet until soft and pliable.
  4. Spread a generous layer of tzatziki sauce over each warm flatbread.
  5. Top evenly with the cooked chicken, cherry tomatoes, cucumbers, red onion, and Kalamata olives.
  6. Garnish with fresh parsley, a drizzle of olive oil, and serve immediately.

Notes

Do not assemble the flatbreads ahead of time or the bread will become soggy. Keep ingredients separate until ready to eat.
