- In a bowl, toss the chicken chunks with olive oil, lemon juice, oregano, garlic, salt, and pepper until well coated.
- Heat a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
- Warm the flatbreads in the oven, toaster, or a dry skillet until soft and pliable.
- Spread a generous layer of tzatziki sauce over each warm flatbread.
- Top evenly with the cooked chicken, cherry tomatoes, cucumbers, red onion, and Kalamata olives.
- Garnish with fresh parsley, a drizzle of olive oil, and serve immediately.
Notes
Do not assemble the flatbreads ahead of time or the bread will become soggy. Keep ingredients separate until ready to eat.
