Method
- Preheat your air fryer to 400°F (200°C) or oven to 425°F (220°C).
- Place hash brown patties in a single layer and cook for 12-15 minutes (air fryer) or 18-20 minutes (oven) until deep golden and very crispy.
- While hash browns cook, mash the avocado in a small bowl with a pinch of salt until smooth but chunky.
- Whisk eggs in a bowl. Heat butter in a non-stick skillet over medium-low heat. Add eggs and cook slowly, stirring gently, until soft curds form. Remove from heat immediately.
- To assemble, place crispy hash browns on a plate. Spread a layer of mashed avocado on each patty.
- Top the avocado with a generous scoop of scrambled eggs.
- Finish by adding a dollop of cottage cheese on top of the eggs.
- Sprinkle heavily with Everything Bagel seasoning and serve immediately while hot.
Notes
For extra protein, use egg whites for half the egg mixture. If you want a spicy kick, add red pepper flakes or sriracha.
