Potato and Onion Cheese Pancakes

Ingredients
  

Pancake Mixture
  • 4 large Russet potatoes peeled and grated
  • 1 medium onion grated
  • 2 large eggs beaten
  • 0.33 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder optional
Filling & Frying
  • 1 cup Mozzarella cheese shredded or sliced
  • 0.5 cup vegetable oil for frying
  • 2 tbsp chives chopped, for garnish

Equipment

  • Box Grater
  • Large Skillet
  • Mixing bowls
  • Cheesecloth or clean towel

Method
 

  1. Peel and grate the potatoes and onion. Place them in a clean towel and squeeze out as much liquid as possible.
  2. In a large bowl, mix the dried potato/onion mixture with eggs, flour, salt, pepper, and garlic powder until combined.
  3. Heat oil in a large skillet over medium heat.
  4. Place a scoop of potato mixture into the pan and flatten. Add cheese to the center.
  5. Top with another scoop of potato mixture and seal the edges to cover the cheese.
  6. Fry for 4-5 minutes per side until golden brown and crispy.
  7. Drain on paper towels and serve hot garnished with chives.

Notes

Serve with sour cream or applesauce for dipping.
