Ingredients
  

The Whip Base
  • 4 cups frozen pineapple chunks
  • 0.5 cup full-fat canned coconut milk stirred
  • 0.25 cup 100% pineapple juice plus extra if needed
  • 1 tbsp agave nectar optional, to taste
  • 1 tsp fresh lime juice
  • 1 pinch salt
Garnish
  • 2 whole maraschino cherries with stems

Equipment

  • High-powered blender or food processor
  • Tall plastic cups
  • Piping bag (optional)

Method
 

  1. Add the pineapple juice, coconut milk, lime juice, salt, and sweetener (if using) to the bottom of a high-powered blender.
  2. Add the frozen pineapple chunks on top of the liquid ingredients.
  3. Blend on low speed, using a tamper tool or stopping to scrape down the sides frequently, until the fruit begins to break down.
  4. Gradually increase the blender speed to high, continuing to tamp or scrape, until the mixture transforms into a smooth, thick, soft-serve consistency. Add a tablespoon of pineapple juice only if the blender completely stalls.
  5. Spoon or pipe the thick mixture into tall cups, creating a swirl at the top.
  6. Garnish with a maraschino cherry and serve immediately with a straw or spoon.

Notes

For the most authentic look, transfer the blended mixture to a large ziplock bag, snip off the corner, and pipe it into the cups to create a beautiful soft-serve swirl.
