- Add the pineapple juice, coconut milk, lime juice, salt, and sweetener (if using) to the bottom of a high-powered blender.
- Add the frozen pineapple chunks on top of the liquid ingredients.
- Blend on low speed, using a tamper tool or stopping to scrape down the sides frequently, until the fruit begins to break down.
- Gradually increase the blender speed to high, continuing to tamp or scrape, until the mixture transforms into a smooth, thick, soft-serve consistency. Add a tablespoon of pineapple juice only if the blender completely stalls.
- Spoon or pipe the thick mixture into tall cups, creating a swirl at the top.
- Garnish with a maraschino cherry and serve immediately with a straw or spoon.
Notes
For the most authentic look, transfer the blended mixture to a large ziplock bag, snip off the corner, and pipe it into the cups to create a beautiful soft-serve swirl.
