Method
- For the soft serve, combine frozen fruit, liquid, sweetener, and vanilla in a high-powered blender. Blend until smooth and creamy.
- Transfer the soft serve to an ice cream maker and churn until desired soft-serve consistency, OR freeze for 2-4 hours, stirring every 30 minutes.
- Pat the fresh watermelon wedges dry with a paper towel. Place them in paper boats.
- Top each watermelon wedge with a generous swirl of the pink soft serve.
- Serve immediately with spoons.
Notes
Patting the watermelon surface dry prevents the soft serve from sliding off.
