Ingredients
  

Watermelon Wedges
  • 1 ripe watermelon seeded or seedless
Pink Soft Serve
  • 4 cups frozen fruit such as strawberries, raspberries, or pitaya
  • 0.5 cup liquid base such as whole milk, heavy cream, or coconut milk
  • 0.25 cup sweetener such as honey, maple syrup, or sugar
  • 1 tsp vanilla extract

Equipment

  • Ice Cream Maker or High-powered Blender

Method
 

  1. For the soft serve, combine frozen fruit, liquid, sweetener, and vanilla in a high-powered blender. Blend until smooth and creamy.
  2. Transfer the soft serve to an ice cream maker and churn until desired soft-serve consistency, OR freeze for 2-4 hours, stirring every 30 minutes.
  3. Pat the fresh watermelon wedges dry with a paper towel. Place them in paper boats.
  4. Top each watermelon wedge with a generous swirl of the pink soft serve.
  5. Serve immediately with spoons.

Notes

Patting the watermelon surface dry prevents the soft serve from sliding off.
