Ingredients
  

Pineapple Base
  • 4 cups frozen pineapple chunks
  • 0.5 cup full-fat coconut milk chilled
  • 2 tbsp agave nectar or honey
  • 1 tbsp fresh lemon juice
  • 1 pinch sea salt
Strawberry Base
  • 4 cups frozen strawberries
  • 0.5 cup full-fat coconut milk chilled
  • 3 tbsp agave nectar or honey
  • 1 tsp pure vanilla extract
  • 1 pinch sea salt
Garnish
  • 2 fresh strawberries halved
  • 1 birthday candle optional

Equipment

  • Food processor or high-speed blender
  • Large piping bags
  • Large star piping tip
  • Clear plastic serving cups

Method
 

  1. Place food processor bowl, blade, and piping bag in the freezer for 15 minutes to chill.
  2. Make the pineapple base: Add frozen pineapple, coconut milk, agave, lemon juice, and salt to the processor. Pulse to break up chunks, then blend on high until thick and creamy. Scrape sides as needed.
  3. Transfer the pineapple soft serve to a bowl and place in the freezer. Quickly wash and dry the processor bowl.
  4. Make the strawberry base: Blend frozen strawberries, coconut milk, agave, vanilla, and salt until thick and creamy.
  5. Prepare the piping bag with a large star tip. Carefully spoon the pineapple mixture down one side of the bag, and the strawberry mixture down the other side.
  6. Pipe the dual-color soft serve into tall clear cups in a circular, upward swirling motion.
  7. Garnish with a fresh strawberry half on the rim, or top with a lit birthday candle. Serve immediately.

Notes

If your mixture gets too warm and runny while blending, put the filled piping bag in the freezer for 10-15 minutes before piping the swirls.
