Method
- Place serving glasses in the freezer to chill for 10-15 minutes.
- Add the frozen pineapple chunks into a high-powered blender.
- Pour the coconut rum, pineapple juice, and optional lime juice over the frozen fruit.
- Blend on high speed for 45-60 seconds until completely smooth and frosty.
- If the mixture is too thick, add a splash more pineapple juice. If too thin, add a few ice cubes and blend again.
- Pour into chilled glasses, garnish with fresh pineapple wedges, and serve immediately.
Notes
For a non-alcoholic version, swap the rum for coconut water or a splash of coconut extract mixed with water.
