Ingredients
  

Slushie Ingredients
  • 3 cups frozen pineapple chunks
  • 0.5 cup coconut rum like Malibu
  • 0.5 cup pineapple juice 100% juice
  • 1 tbsp lime juice freshly squeezed, optional
  • 2 wedges fresh pineapple for garnish

Equipment

  • Stemless wine glasses

Method
 

  1. Place serving glasses in the freezer to chill for 10-15 minutes.
  2. Add the frozen pineapple chunks into a high-powered blender.
  3. Pour the coconut rum, pineapple juice, and optional lime juice over the frozen fruit.
  4. Blend on high speed for 45-60 seconds until completely smooth and frosty.
  5. If the mixture is too thick, add a splash more pineapple juice. If too thin, add a few ice cubes and blend again.
  6. Pour into chilled glasses, garnish with fresh pineapple wedges, and serve immediately.

Notes

For a non-alcoholic version, swap the rum for coconut water or a splash of coconut extract mixed with water.
