Method
- Rim a rocks glass with a lime wedge and dip into coarse sea salt. Fill glass with fresh ice.
- Pour the pineapple juice directly into the glass over the ice (fill about half way).
- In a cocktail shaker, combine fresh blueberries and lime juice. Muddle thoroughly until berries are smashed.
- Add tequila, triple sec, and agave to the shaker. Fill with ice and shake vigorously for 15 seconds.
- Slowly strain the purple blueberry mixture over the pineapple juice to create a layered effect.
- Garnish with a pineapple wedge and extra floating blueberries. Serve immediately.
Notes
For a smoother drink, fine-strain the blueberry mixture to remove skins. For a rustic look, pour skins and all.
