  • 24 slices pepperoni
  • 0.5 cup mozzarella cheese shredded or sliced thin
  • 1 tsp Italian seasoning
  • 0.25 tsp black pepper coarse ground
  • 1 tbsp fresh parsley chopped (optional garnish)

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Arrange pepperoni slices in a single layer on the baking sheet, spacing them slightly apart.
  3. Top each pepperoni slice with a generous pinch of shredded mozzarella cheese.
  4. Sprinkle Italian seasoning and black pepper over the cheese.
  5. Bake for 8-10 minutes, or until the cheese is bubbly and golden brown and pepperoni edges are crisp.
  6. Remove from oven and let cool on the pan for 2-3 minutes to allow cheese to crisp up before serving.
  7. Garnish with fresh parsley and serve with marinara sauce if desired.

Notes

Store leftovers in an airtight container in the fridge, though they are best eaten fresh. Reheat in oven or air fryer to re-crisp.
