  • 1 cup peaches fresh or frozen
  • 1 cup coconut milk
  • 0.5 tsp vanilla extract
  • 0.5 cup ice cubes optional, if using fresh peaches

Method
 

  1. If using fresh peaches, wash, pit, and slice them into chunks.
  2. Add the peaches, coconut milk, and vanilla extract to a high-speed blender.
  3. If using fresh room-temperature peaches, add a handful of ice cubes for a colder drink.
  4. Blend on high for 45-60 seconds until completely smooth and creamy.
  5. Pour into a tall glass, garnish with a fresh peach slice or a dash of shredded coconut, and serve immediately.

Notes

For the thickest, most ice-cream-like texture, use frozen peaches and full-fat canned coconut milk.
