- If using fresh peaches, wash, pit, and slice them into chunks.
- Add the peaches, coconut milk, and vanilla extract to a high-speed blender.
- If using fresh room-temperature peaches, add a handful of ice cubes for a colder drink.
- Blend on high for 45-60 seconds until completely smooth and creamy.
- Pour into a tall glass, garnish with a fresh peach slice or a dash of shredded coconut, and serve immediately.
Notes
For the thickest, most ice-cream-like texture, use frozen peaches and full-fat canned coconut milk.
