Parmesan Cloud Chicken Bombs

Ingredients
  

Chicken Mixture
  • 1 lb ground chicken or finely chopped breast
  • 0.5 cup mayonnaise
  • 0.5 cup parmesan cheese grated
  • 0.5 cup breadcrumbs or almond flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 pinch salt and pepper to taste
Coating & Serving
  • 0.5 cup parmesan cheese for rolling
  • 4 large potatoes boiled and mashed
  • 2 tbsp melted butter for garnish
  • 1 tbsp fresh herbs thyme or parsley

Equipment

  • Baking sheet
  • Large mixing bowl
  • Ice Cream Scoop
  • Potato Masher

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, mayo, 1/2 cup parmesan, breadcrumbs, and spices until combined.
  3. Using a scoop, form the mixture into large round mounds (about 4-5 mounds).
  4. Roll each mound in the remaining parmesan cheese to coat completely.
  5. Place on baking sheet and bake for 20-25 minutes until golden and internal temp hits 165°F.
  6. While baking, prepare mashed potatoes with butter and cream.
  7. Serve chicken bombs on top of potatoes, drizzled with melted butter and fresh herbs.

Notes

For a spicy kick, add red pepper flakes to the chicken mixture.
